Its Fall!! The weather is growing cooler and the days are getting shorter. I am so excited to share with you the very first post on "Macarons For Breakfast". I hope this simple, and healthy recipe will give you the boost you need to get going on these short Fall days.
Pumpkin Muffins
Ingredients:
- 3 cups flour
- 2 tsp cinnamon
- 1/4 cup sugar (optional)
- 1/2 tsp nutmeg
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup brown rice syrup
-1 canned pumpkin (2 cups fresh pumpkin)
- 1/4 cup applesauce
- 1/4 cup oil
- 2 eggs
- 1 1/2 tsp vanilla
Directions:
Preheat your oven to 375 degrees F. Line a muffin pan with 12 paper muffin cups. In a large bowl whisk the dry ingredients together. In a different bowl beat the wet ingredients together. Now combine the wet ingredients to the dry ingredients until there is no longer any of the dry mixture visible. Scoop the batter into the prepared pan and bake for 18-20 minutes, until a toothpick inserted in the middle of one of the muffins comes out clean. :) Enjoy!
